The Pan Bagnat is a specialty of traditional Niçoise cuisine, made from a round bread roll filled with raw vegetables, Niçoise olives, anchovies or tuna, and olive oil. Its name means “soaked/wet bread” in Nissart (the local dialect), because it was traditionally prepared by modest families using hard, stale bread that was softened under a drizzle of water. Over time, it was replaced by a special bread soaked in olive oil.
