This traditional dish from Nice is now a must-have starter throughout the Mediterranean. It’s made with fresh raw vegetables: lettuce, tomatoes, garlic, onions, peppers, and celery, along with hard-boiled eggs, anchovies, tuna, and olives. This ancestral salad is meant to be eaten cold, usually as a starter, and more rarely as a main course.
You can find salade niçoise or one of its many variations almost anywhere in France, but of course, the best recipes are in Nice itself. Many restaurants, such as Lou Balico, l’Escalinada, or La Merenda, serve an excellent salade niçoise.
