Socca is a symbol of traditional Niçoise cuisine. This thin pancake made from chickpea flour and olive oil is baked in a wood-fired oven in a “socca pan”, which is usually round. It is said that in the Middle Ages, fishermen used to eat it before heading out to sea. Today, socca is considered a snack — often enjoyed hot, at aperitif time, with a generous sprinkle of pepper.
